Fat Tuesday, Donuts and Easy, Delicious Gumbo

Being that today is Fat Tuesday, I thought I would join my friends over at FTLOB for their Tasty Tuesday and share a couple of recipes.


I just wanted to share a little background of Fat Tuesday, its roots lie in the Christian calendar, as the "last hurrah" before Lent begins on Ash Wednesday. That's why the enormous party in New Orleans, for example, ends abruptly at midnight on Tuesday, with battalions of street sweepers pushing the crowds out of the French Quarter towards home.  To read more go here.  It tells a really good explanation of Fat Tuesday and Mardi Gras


This morning for breakfast I decided to make some donuts.  Not just any donuts, but Cafe Du Monde donuts.  Cafe Du Monde is the Original French Coffee stand in New Orleans.  Everyone that I know that has ever been to New Orleans has told me how wonderful their donuts are. A few weeks ago while browsing the newspaper flyer's, I found in the World Market flyer, they had Cafe Du Monde donuts on sale.  I jumped on the opportunity and purchased two boxes.  They are so easy to make and super yummy.  If you don't have a World Market close to you, you can always go to Cafe Du Monde and order some.  They are totally worth it!  All you do is add water to the mix, roll and cut it out and drop it in you hot grease.  Seconds later, fresh, delicious, mouth watering donuts!  






When they are finished, top with powdered sugar and ENJOY!


I also wanted to share my Easy Chicken Gumbo recipe.  I don't remember where I got this one, but is so good, I had to share.


Ingredients:
3 Chicken breasts (cubed)
1 onion
3 celery stalks
1 green bell pepper
1tbs Garlic powder
1 whole Bay leaf
1 pinch Thyme
1 pinch Oregano
1 container beef broth
3 cans water
salt and pepper to taste
1 can stewed tomatoes
parsley
okra (optional)
hot pepper sauce (optional)
cooked rice
green onion (optional)
sausage (optional)


1. Saute onions, celery and bell pepper in butter in skillet, transfer to gumbo pot
2. Saute chicken until firm, but not brown.  Transfer to gumbo pot
3. Add broth, water and seasoning, bring to boil in gumbo pot, reduce heat and cook gumbo on low for 40 mins.
4. Serve over hot rice, top with green onion.

These sounds delicious! What a shame we don't have the baking mix here in sweden. Here we generally bake everything from scratch, very time consuming :(
