Leftover ham recipes

If you all are like me, you have more than enough leftover ham to get you through the week.  Being that I'm not a big ham eater, I thought I would share some recipes to help you all get rid of that leftover ham from Easter.  
I bought a 9 pound ham with the thoughts of having company, but when that didn't happen, it left me with 8 1/2 pounds of ham.  Besides making ham sandwiches for Steve and the boys, here are some other yummy recipes you can enjoy!


Au Gratin Potatoes with Ham
Ingredients:
  • 4 cups diced potatoes
  • 2 cups chopped green onions
  • 5 tablespoons butter
  • 5 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon prepared yellow mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons chopped pimiento
  • 2 cups shredded Cheddar cheese
  • 2 cups diced cooked ham
  • 1/2 cup plain soft bread crumbs
  • 3 to 4 tablespoons butter, cut in small pieces
Preparation:
In a saucepan cook potatoes and onions together in lightly salted water until tender, 12 to 15 minutes. Drain. To make white sauce melt 5 tablespoons butter in a medium saucepan. Add flour, stirring until blended. Cook, stirring, and gradually stir in milk. Add Worcestershire sauce, mustard, salt, pepper, paprika and pimiento. Cook, stirring, until thick. Place half of the cooked potatoes and onions in a large buttered 3-quart baking dish. Cover potatoes with half of the cheese. Spread all the ham on the cheese. Cover with remaining potatoes.
Pour the cooked seasoned white sauce over all. Sprinkle remaining cheese over top. Sprinkle with bread crumbs then dot with butter. Bake in preheated 350° oven until cheese is melted, about 10 to 15 minutes.
Serves 6 to 8.

*This is my favorite thing to do with leftover ham!
Beans and Cornbread
Ingredients
  1. 1 jar great Northern beans
  2. 1/2 pound cooked ham, diced or ham bone with some ham
  3. 1 small onion, diced
  4. salt and pepper to taste
  5. 1 package Jiffy cornbread mix
Directions
  1. Throw one jar of great Northern beans in a crock pot
  2. Add onions and ham bone/ham
  3. salt and pepper to taste
  4. Let Cook for 4 hours on high or 8 hours on low
  5. Make Jiffy cornbread following directions on the box
Ham Salad
Ingredients
  1. 3 cups ground fully cooked ham
  2. 1 hard-cooked egg, chopped
  3. 2 tablespoons finely chopped celery
  4. 2 teaspoons finely chopped onion
  5. 2 teaspoons sweet pickle relish
  6. 3/4 cup mayonnaise
  7. 1 tablespoon prepared mustard
  8. Assorted crackers
Directions
  1. In a bowl, combine the first five ingredients. Combine mayonnaise and mustard; add to ham mixture and mix well. Refrigerate until serving.

This sounds delicious! I love that someone else has ham on Easter - we used to do that all the time. My dad usually just makes it into sandwiches but this is a great idea instead - just bookmarked the recipe for next time!
